I’d rather do a braise on the flanken ribs. I do them in with oxtails.

Those look great, pronstar. My favorite is fajitas, but I also made some basic pork riblettes on Saturday. Very tender, and I'll put away most of them and pull a few out every now and then for breakfast!

I'm actually in the market for a new Flattop. Gave away my backstone. Camp Chef is coming out with a Flat top on the 21'st. Love making smash burgers
