    I’m partial to Japanese steel...I use a Global Santoku and Chef’s knife.

    No interest in a full set, but I would like a Global pairing knife to complete my mini collection.

    We use Henkels serrated steak knives. Cutting on dishware is too hard on a straight edge, they dull quickly.

    I'm bringing life back to an old thread.

    My absolute favorite kitchen/cooking knives are my Old Hickory knives. Mine are old and have been used a lot. Old Hickory knives are still made today and are a very good value for the money. They are not pretty stainless steel knives but they will get the job done.

    I have the forged European knife sets and a bunch of Gerber's. But the most used are the Chicago Cutlery set from years back.

    Anyone looking for kitchen knives would do well to check out the online catalogs of A G Russell Company in Arkansas. They both import and manufacture great cutlery.

    Consider adding (later) a cleaver.

    We did without one for years, but now have a low cost ($40.00) one from Amazon and man oh man, wished we'd gotten it sooner.

    It must be soft metal as after each use I hit it a couple of licks with an Accusharp knife sharpener and bam, it's really sharp again.

    It’s great for cutting thru bone.
    I’m surprised at both the sharpness, and how long it holds an edge.

    Plus it sorta matches my globals

    I consider that amount measures to 1 Glock unit.

    Relatively, inexpensive for some excellent kitchen knives.....

    I don't recall if it's been mentioned: Wash quality knives by hand, never in the dishwasher as it really dulls them and does them no good.

    $500 is roughly 15 shares of ATT stock. 7% a year in dividends ain’t chicken feed.

    Now, if I were to spend the money hunting up in Prince Albert, BC, or Patagonia Argentina, I’d consider it money well spent :)

    I've started doing that on these new knives. Helps tremendously. I also threw out all my cutting boards that were not wooden or bad for the blade.

    I need to get a steel and learn to hone the blade.

    I also didn't know there are different blade angles for different knifes. Depends on its origin. Pretty fascinating really...

    Plus, no need to buy a new one when the stones are worn. Easy to turn over the existing stones for twice the life.

    And, the stones are less costly to replace than a new sharpener (ok, honer)and are available at Amazon.
