I didn't mean to give that impression. Keto, afaik, places no restrictions on fiber.

My problem was my incompetent implementation of the keto diet. I made a major change in diet without making sure that I got enough fiber. That was stupid on my part. Next time I commit to keto, I'm going to make sure I take in a ridiculous amount of fiber.
Avocados are the answer you seek.

Yeah. I know. I've heard. Too bad I loathe avocados. (And cinnamon, another thing that it seems everyone loves that I can't stand.)

There's a place near me that makes keto meals that are generally good. I'll stop off for a keto burger sometimes; it's basically a lettuce wrap. Unfortunately, I can't eat most of the stuff on their keto menu because almost all of it come with mass quantities of guacamole.

I lol’d at the quote from the ADA in this. They basically admit that low carb diets work but are just “too hard”.
    OMGs it's soooo hard

Ya I know its not cured but its laying on the ground writhing in pain.
    Congrats!

I put myself on a "cheat keto" diet, around 120 carbs/day
That's not even low carb  I was targeting 20 net carbs a day, with one cheat meal a week where I'd go way over.

I started doing it just to lose weight (lost 75lbs), but a nice side effect was my cholesterol significantly dropped. Went from having my doc saying, "we might need to put you on a statin," to it being the low side of normal. This was with me eating large amounts of "bad for your cholesterol" foods like eggs and steak.

I'm willing to try keto again...
Don't worry about the keto part, just target low carbs to keep things simple. If you're not getting anywhere with that, then try something else.

On the constipation front, I never felt constipated from doing low carb, but are definitely smaller and less frequent than before. On days that I eat something with bread my poops are much larger. I think when you're eating healthier stuff in the right portions that digests fully you just poop less.

    .

It is when you consider I went from eating anything I wanted, then down to ~120.
Wasn't a weight loss diet, it was strictly to lower my A1c.
Still doing it 3 years later.

Oh, and I still poop 2-3 times a day.

Yes, it is. No matter how many wonderful meals like the ones you posted I eat, when I'm trying to be low-carb there will inevitably arise occasions when I'd murder a kitten for a bottomless Coca-Cola and a bowl of noodles from a Chinese joint.
I don't drink sodas anyway, but I do love me some Chinese food.

Bread is what I miss. Hard to say no when it's warm and fresh. Impossible to say no when it's my mom's biscuits
Bread isn't my issue, I don't really like bread anyway. Its them taters I'd have a hard time getting rid of.

When I do the 40/30/30 I posted about earlier I eat 6 times a day, and if I eat the right amount of carbs I seldom get that carb hunger, nor do I get the crash that happens from over-carbing.

I’d kill to be able to eat Asian noodles again...

Swap Bourbon for Coca-Cola and fried chicken for Chinese, and I know exactly what you mean.
