My 2016 Jetta had the temp/low coolant light come on about a month ago and again on Monday.
Both times it took less than a pint of water to get it back into the max/min zone.
I can't find any damp places in the engine compartment.
I'm wondering if the thermostat isn't opening enough and making the cooling system boil off a bit, although I don't see where it spits out.
I've owned the car for a year.
    Any suggestions?

It could be leaking through your head gasket. Once in the cylinder the water is vaporized and out the exhaust. Check your plugs for signs of water.

I’m going to be optimist and say that much water can be a pinhole leak from the radiator...

    Thanks guys.
Car has only 22k on it.
I bought a warranty service when I bought the car.
I’ll call the service department tomorrow.
Hopefully, out of pocket expense is small.

Check your oil, if it’s milky, that’s where the water is going.

Source of water would be the head gasket as noted above.

Yup, I checked the oil right away.
"Making oil" is what that was called.
I would fuel and check the equipment out when they came in from the morning runs. If the oil kept rising, in she goes for rebuild.

It turns out that the water pump was leaking.
The ordinary warranty of 3 years/36,000mi had run out but there was still a power train warranty.
VW came to the house picked up the car, replaced the water pump and brought the car back that evening.
