    Lots of people generally go pretty traditional for Thanksgiving, and many people did more of a traditional dinner for Christmas day very similar to Thanksgiving dinner. We did for many years, long ago. But I have seen many going a non-traditional direction for Christmas dinner now for some years. The wife and I and the family have gone more non-traditional over the last several years now.

    So traditional, or non-traditional Christmas dinner?

    The wife and I are doing beef enchiladas, King Ranch Chicken, and tamales for Christmas dinner this year. Have no idea what my wife's sister or mother are making, but it will be quite good. It always is!

    I've got 22lbs of shank on the smoker and a chicken soon for the one person who MUST have some type of bird. Wife is cooking the normal stuff - homemade stuffing, twice baked taters and a few other things. Pecan pies were done last night and the pumpkin is underway. Yes, we're having ours today.

    We've done plenty of non-traditional but nobody could decide this year...so back to the basics!

    A niece has invited the wife and I over for a Christmas Eve supper. The wife is fixing a couple of dishes to take. I don't care what we're having, it's more about the family getting together to me.

    We also have a neighbor lady that will turn 88 on New Year's Day and she's going with us. She is a fine lady, sharp as a tack, and a marvelous sense of humor. We invited her and she accepted. I'm happy that she accepted because I didn't want her to be alone.

    Brisket, chicken, smoked salmon. Kids are bringing the sides.

    kids are married and are having traditional meals At their in-laws, so they requested something different.

    As "my Christmas plans" fell through at the last minute, I will do Christmas dinner tomorrow night alone: SMOKED PORKED CHOPS with loaded baked potato, pinto beans w/pork, banana pudding w/vanilla wafers & iced coffee for dinner.

    Then the football game, watch DVDs, read a book & then "- - - - settled down for a long Winter's nap".

    MERRY CHRISTMAS to ALL members & to their loved ones.

    Well the 6 qt’s of chili (7 lbs of meat) has been consumed when the hoard descended upon the house.
    3.2 lbs of bison stew meat
    3 lb’s of angus stew meat
    1 lb of chorizo.

    The stew meat sliced into about 3/4” pieces.
    Chili powder from Penzy’s (medium).
    About 8 small sweet bell peppers diced.
    1 red onion diced
    1 white onion diced
    Salt
    3 heaping tablespoons of minced garlic.
    Beef stock instead of water.

    Simmered about 3.5 hours until the stew meat was tender.
