Umm, that does not sound good at all.

Nothing more then moose head cheese.

If your not using as much of the animal you killed for food your doing it a big disservice.

I understand that, never been a huge fan of head cheese either. I'll eat a lot of things but that was one thing I just never really enjoyed.

Around here where I live, there is mostly a Czech/German population and the head cheese (Ethinitza) as they call it, is a true delicacy. I tried it once and really offended my friend, who made it, by telling him that it was something I would not even feed to my worst enemies mangy dog. I was told by many other acquaintances that he was know for making the best Ethinitza in 5 counties.
