    I've been cooking a lot of tri tip. HEB has it for under $6 a pound. I seed it with garlic slivers, sear it then roast it on a bed of onion slices in an uncovered Dutch oven on lower heat. It comes out great, and the onions are great on the side, too.

    3rd one from the same ranch/processor in 5 years.
    Grass fed. Grain finished.
    Cut to my specifications.

    I probably won't buy store beef for another year or more.

    It's much better and averages out to about 1/2 price on the premium cuts.
    Ground is a little higher, but way better.

    I sell beef from my own heard but until the animal is hanging we don't know how good each one will be. Point being, even if you buy direct from a rancher you may end up with a lot of select grade meat.

    Some places use ultrasound on live animals to try and grade the meat before slaughter but that's a niche thing.
    You really need to let the beef hang for a couple of weeks and see how it marbles out.

    Exactly. This is what we always do, parents also would buy 1-2 from the fair every year. Helps out the kids and you get a tax break. Between that, hog and deer we never had to buy meet from stores.

    Always check to make sure you get the correct beef . Munster fucked me over good one year.
