    For the last couple years, we've begun canning vegetables just like my mom and her mom used to do.

    Built a small footprint, vertical garden to reduce water consumption and visited a few local farmer's markets around to supplement what the "farm". The summer sun was brutal, but we kept it going and still harvesting tomatoes. Its pretty neat to see my grand daughter walk up to the vine, pluck a cherry tomato and pop it in her mouth.

    I'm very interested in the rainwater collection rig in the other thread.

    The wife is a savvy shopper and picked up most of the jars at Big Lots, many time at $0.50/jar.

    Neighbor has a pear tree and we put up 11 qts of pear sauce. the grand baby loves it.
    We spent a couple days shelling black-eyed peas and 30 pints.
    Lots of tomatoes, carrots, jellies and jams.

    She found a recipe for beef stew and chili ...

    When we moved off grid we weren't sure how soon we would have refrigeration, among other things. We canned like crazy, mostly meat as canned vegetables were cheap enough at the store. We ate off of it for almost a year, made for such easy meals we are thinking of firing it up and canning more even though we have a freezer now that all the meat goes into. Pork, Beef, Chicken, taco meat, chili, even Bacon :) we canned it all and I highly recommend it.

    I'm popping open a canned beef stew for lunch today.
    Yep, that's what most of my canning gets used as. All I have to do to pack my lunch is grab a jar from the pantry. It's really convenient. Whenever I find a good sale on meat, I'll buy a bunch and make various stews and chili.

    WOW, I found someone that has more mason jars than I do....

    We don't do pressure canning, want to try, I use Harsch Crocks, have 3 of them and about 50 jars of ferments in my fridge. I eat about a jar every 3 days. However they have to be fridged doing the lacto-fermentation style method, but I'm doing it for health reasons....

    I don't can anything but I do use the pressure cookers for cooking almost weekly. Tonight, I whipped up 12 chicken legs in 13 minutes in the PC, slapped them on the grill with BBQ sauce and had dinner ready in 30 minutes with plenty of leftovers. I do ribs and pork roast the same way. I LOVE my pressure cookers!

    I bought a propane camp stove to do mine. The electric stove top just doesn't put out enough to get that large of an amount of water boiling. It's insanity going back an hour later and the water isn't even boiling yet. :banghead:

    I've done a lot of pressure canning on an electric range; it actually doesn't require much water. You only need enough water to completely fill the vessel with steam. I've got a big 22-quart... The instructions that came with it say how much water you need to put in, but I just eye ball it since it's not that critical. Couple inches seems to be enough for a 90+ minute canning time.
