    I'm considering going for my first hunt this spring. Looking at just a meat hunt for an Axis doe. We don't have a big deep freezer or anything though. I'd hate to give half of it away after shelling out the cash for the hunt. Also if anyone has any recommendations on ranches to go to or stay away from feel free to give me a heads up.

    Probably try and keep the hide, not into a bunch of dead animal heads looking at but Axis have nice patterns. Seems I could find a place for it somewhere.

    Not enough room in the freezer? Can it! I would whip up a big pot of deer stew or chili and can it in single or two person sized servings. It's pretty awesome to be able to just reach into the pantry and grab a ready to eat meal off the shelf.

    I've had a freezer full of meat go out before... That was really, really disappointing and wasteful. Canning is my preferred method of storage now.

    I've had a freezer full of meat go out before... That was really, really disappointing and wasteful. Canning is my preferred method of storage now.

    I've only done waterbath, don't have a pressure canner for low acid. Running out of room in our shoebox of a kitchen with all of our toys. Could find a place for a pressure canner though.... been wanting to do some spaghetti sauce instead of plain tomato basil garlic all the time.

    Whats better than a freezer full of deer meat ? Its 2 freezer full of deer meat.

    Splain this canning thing to me. Been hunting for years and always butcher papered it. My wife knocked the plug loose on my chest freezer a couple years back and lost almost 100#s of meat. Had some badass elk and axis in there along with over 100 dove breast. I was NOT happy.

    For meats and other low acid foods like most veggies, you need to pressure can them. You can raw pack meats, but I prefer to make ready to eat meals. What I will do is prepare a batch of stew or chili as if I'm going to cook it in the crock pot for a few hours, but instead of it going into the crock pot I portion it out into jars. The jars go into the pressure cooker for at least 90min, and once everything is all done I have ready to eat meals that are shelf stable for at least 2 years.

    There's lots of instructional videos on youtube. Just search for "how to can xxxxxx" and you'll find what you're looking for.

    are you just winging your own recipes with the pressure canner?

    I know with waterbath you are supposed to stick with exact recipes. I typically just do plain tomato sauce or garlic & basil as a base sauce for other recipes whatever I or the other half is cooking that day.

    for slowtruck guy, here is a ton of info you should at least browse a bit before jumping in. Botched canning can really get you sick.

    If you're asking about cook time, the important thing to remember on pressure canning with multiple ingredients is to hold it at pressure for the ingredient with the longest required time. Pretty much all meat requires 90min, with some seafood requiring 110min or more. I never can seafood, so 90min is what I typically do. If you buy a pressure caner, it should come with a little table telling you how long to cook at what pressures for various ingredients.

    The deal with water-bath recipes is you have to maintain a certain pH level, or else it'll grow undesirable things. You could modify recipes as long as you kept the pH below 4.6

    The National Center for Home Food Preservation is a great resource, but I'm pretty sure DHS considers everyone who goes there a terrorist ;)
