    Boudin and fried eggs, cooked the old fashioned, Cajun way.
    Good Cajun kids'll fight over the 'gratin' at suppertime...the almost burnt/crusty part at the bottom of a pot of cooked rice.

    Boudin and fried eggs cooked this way, the rice in the boudin makes a 'gratin' that will make you slap yo mama, I guarantee ...

    Baked turkey breast marinated the previous night in worcestershire sauce and some "Special Shit" seasoning and a home made pasta salad.

    Actually two nights ago, double smoked ham.
    A Kentucky Legend sliced 1/4 ham in the smoker with apple chips for 2.5 hours.
    Smoking greatly intensified the ham flavor.
    Had oven roasted broccoli and slaw for side dishes.

    Grilled New York strip steak. Whole russet potatoes wrapped in foil. Sliced romaine tomatoes. Whole baby Bella mushrooms.

    The tomatoes and mushrooms will get a wipe down of salted butter with added garlic powder, crushed pepper and paprika. Placed on a grate. The mushrooms cap down.

    Once the potatoes do the time. The mushrooms and tomatoes will go on the grill about 5~10mins ahead of the steak. It's a thin steak so 3mins each side.

    Coors Light for desert.

    Shrimp and Andouille Noodle Soup ... yep, you heard right, Al Fredeaux's at it again. So good had to walk up and down the street looking for yo Mama to slap.

    Don't have a pic, but made up some blueberry-maple-sage sausages, as well as some boudin sausages tonight from Central Market. They were all delicious!

    Chicken fried steak.

    Tenderized' round steak from HEB.

    Two bowls. First bowl pepper, salt, and cayenne pepper. Baking soda and baking powder. Pour of milk and an egg. Whisked up. Second bowl. Flour, garlic and onion powder.

    Meat was dunked in #1. Then shook around in #2. Back to bowl 1. Final jiggle in #2. Deep fried.

    Side dish, jalapeno popper casserole. It's like jalapeno poppers off the grill but with potatoes in a baking pan that you scoop up.

    The wife went to Tampa two weeks ago and I've been Jonesin' for a Cuban sandwich since.

    I made my own mojo and marinated a pork butt for three days. Made the bread too. So, mojo pork, sweet ham, Swiss, mayo, mustard and pickle slices. Hot pressed in butter. I gotta eat these more often.
