    I hear you. Here in ETX, fresh seafood is tilapia and catfish.

    I make a seafood run to Louisiana three times a year. Load up on shrimp, oysters, turtle, alligator, saltwater fish and real boudin.

    Here's some oyster/artichoke soup to tide you over.

    Strangely enough, do get Richard's boudin and andouille here in Hot Springs at the local Harp's grocery store ... it'll do in a pinch.

    Tonight it's gonna be NY strip steak on the grill. Rare. Potato and beans.

    The better half went to go see her mom up north. The steak is rare tonight. None of that medium well done crap.

    HEB has the Smithfield bone-in pork shoulder for $1/lb, so we will eat pork until Turkey Day arrives! One hour in the pressure cooker, then a few minutes under a broiler to crisp up the ends, YUM-OH carnitas or pulled pork!!!

    Wednesdays are a late supper. It's beans or lentils. Tonight it's black eyed peas with some smoked ham from Thanksgiving.

    Peas, ham, yellow onion, two cloves garlic, sprinkle of cumin, bay leaf, cayenne pepper, salt and ground pepper. The peas weren't soaked. It all went into a pressure cooker. At 15mins, I turned off the fire.

    I grilled salmon I seasoned with Aw Shit, lemon juice, liquid smoke and tobasco. 2 sides tonight with the fish. Chicken seasoned rice and sautéed zucchini and yellow squash with oregano and garlic powder.

    Had Pappadouex lunch today, and will have my leftovers tonight. When I go there I always get the dinner portion of the Pasta Mardi Gras. Its a bunch of food, so I eat half and take half home.

    The wife works tonight, so its me, my leftovers and Longmire Season 6.

    I ate: Stuffed Chicken and Mushroom jumbo pasta shells with spaghetti sauce about 6-8?

    Salad with Ranch, romaine, iceberg, croutons and French fried onions and cracked black pepper. Some marshmallows, a pkg of strawberry poptarts, chocolate milk.

    To be fair this was my first meal of the day(I slept all day)
