    Out here by the lake!
Fried sweetbreads, mash potatoes, green beans.

Anyone that hasn’t tried sweetbreads should. Fried up in a jacket like a chicken fry, MAN, they are mouth watering good.
I love sweetbreads every way I ever had them. I remember ordering a case of them years ago basically my boss & myself wanted them. Then the cost was .99 cents a pound.

Back then on our wedding anniversary the wife & I would hit a fancy place & celebrate that way. So we ended up @ Cafe Annie because it was one of the hottest restaurants in town. I see Sweetbreads on the menu @ 23.00 per plate. Needless to say I couldn't justify ordering it because I knew the cost on them.

Month 7 of gluten free, down to 240.

Having a Jimmy Johns "unwhich" (no bread, wrapped in lettuce leaves) tuna sandwich. stuck here till 11, still gotta eat right. Have not had a pizza since before new years. It was my go-to during late working hours for many years. Probably how I hit 280.

    Congratulations deemus!

It takes perseverance and will power to stick to your guns when it comes to eating. I’m in the ramp down phase of a 1000 cal a day diet that starts April 1 and I know I’m looking forward to the results. As is my wife.

    This is awesome news.
I have started a female fitness app and have cut out junk and most fats. I have gobe from 154 lbs down to 146.4 so far. Goal weight is, at the very least 130, but ideally 125 would be great.
If I see more people posting like this it will inspire me to keep going. I just don't have the motivation I need sometimes.

Down 20 lbs since right before Christmas, and not really trying.

Low carb (< 20gms/day), little or no sugar, basically modified keto.
Knees and joints feel like they did 30 years ago, thanks to MCT oil (3 tbs/day, mostly in coffee, along with butter).

Two eggs, cooked in coconut oil, with bacon and sausage for breakfast.

Energy level, at 75+ years of age, is suddenly scary ...

Made "fat bombs" Saturday, but haven't been hungry enough to eat but two of them. Amazing how they take care of that after meal sweet tooth, but really don't feel the need

    .

    1 C coconut oil
1/2 C coconut or almond butter
    2 tbs. grass fed butter
    4 tbs. raw cocoa powder
4 tbs. xylitol (or whatever keto sweetener you prefer)
    1/2 tsp vanilla
    pinch of salt

    Each Fat bomb:
    calories 91
    fat 9.5 gms.
    carb .76 gms
    protein .38 gms

    fat 92%
    carbs 7%
    protein 2%

    Leftovers + fresh veggies ...

Meatloaf, oven fried boneless thighs, mashed, mac n queso, fresh homemade guacamole n fresh sautéed snow peas.

Best part about cooking is getting to choose what’s for dinner :)

    Prepping for dinner...

The hookup on a 7lb slab of bone-in prime RIB I picked up during the Christmas holidays. Aged that puppy good.

Accompanied by fresh guacamole. 3 avocados, 1 cup Pico de Gallo, salt, pepper & dash of garlic powder.

If there’s a plus side to living in coastal S. Cali, it’s the mild weather and ability to grow a ton of stuff that won’t grow here. Years ago when I lived there I had avocado trees in the yard and got spoiled eating them by the bucket full. When I moved back to Texas the damn things were a buck a piece and I didn’t indulge my inner guac because I’m a tight bastard with my money. Nowdays, between Walmart and Aldi, avocados are so cheap I eat them every day.

fwiw, I can eat a couple avocados then drink a glass of pure grape juice with no more than a 10 point rise on the glucometer, barely going over 100. Drinking grape juice on an empty stomach, my glucose would hit 200+.

That's choice, not prime. Unless you thing it being a prime rib makes it so. You bought the right end of it, but cooking it bone side down works much better.
