    Actually, try it with some brisket instead of ham hocks.
    Pintos and Lintel beans get salt pork.
    Lima beans, butter beans and black eyed peas get ham hocks.
    If I want smoke flavor I cook the beans in the smoker.
    The brisket is in the smoker cooking at the same time as the beans to be eaten together. 18-24 hours after they go in.

    Turnip greens, mustard greens, collard greens. Cooked with some bacon. Fresh cornbread and a little pepper sauce. Good eating.
    I can go along with that.
    First and only time I had greens was in basic training. I thought it spinach, needless to say I have never had it again.
    If you cook greens with something nice and fatty, ham, smoked pork necks or ham hocks, they come out better.
    Cook greens till soft. Pour off water.
    Add meat. Bring to light boil then turn down and simmer until the meat starts to fall apart.
    Very important. Eat the meat with the greens.
    Fresh greens. NOT canned. There is no help for canned greens. Theys done ruirnt.

    Our office is in Seattle and the Chief Steward of the ship is from there also. She likes to make things that are "healthy for you". AKA inedible. I actually offered her $150 to serve fried pork chops with mashed potatoes and black eyed peas. She gave me a funny look and went back to the galley.

    Been there many times. I'm surprised it's still there if it's the place I have in mind. Assuming it is...

    I once got thrown out. It was in the early 1980s and my date wasn't wearing enough clothes. They said they were getting complaints and she was too much of a distraction.

    I lived a bit differently back then, I suppose.

    The wife and I ate again at the Stockmans Cafe outside of Elkhart last Saturday. She got the triple decker BLT, fries and an order of fried pickle slices. They did NOT get stingy with the bacon on her sandwich! I had the fried catfish dinner, with fries. slaw, jalapeno hush puppies, and a side order of hand battered onion rings. It was some of the best catfish I have had in some years. The food was beyond excellent, AGAIN! Service was wonderful.

    If you happen to be passing through Anderson county and get hungry, and find yourself just outside of Elkhart, stop off at Stockmans Cafe at the cattle sale barn and get something to eat. I promise you won't regret it!

    Glad to hear something good in Anderson county. Talk about eats, didn't they have 3 Chinese buffets in one spot on the south 256 ?

    I spent many years in and around the area from 1964-2013. Owned property bumping into the Methodist Encampment, spent time feuding with the sheriff who let his son use my lakes. The next sheriff that came along ran a first rate office and helped me on several matters.

    Sold out but family still had me staying in all the Palestine motels at one time or another.

    Over time, I hired several of the 22 lawyers in the 21,000 population Palestine. That town is meth central.

    The doctors and lawyers there take turns being mayor.

    Saw incredible corruption in the court and lawyer system there. One lawyer, who I almost hired, teams up with a lady in Boulder, Co. to give seminars on how to hold your hand to draw in spiritual energy. Glad I checked him on google ! Finally went across the county line for a lawyer, which really irritated the judge.

    Back on topic, one of the Chinese places was pretty good, but I'm never going back that way.
