    On the way back from a trip Friday we stopped at a road side BBQ joint
    I noticed the sauce on the table had a orange-red tint to it
    I ate it on chicken and it was darn good
    It had a twang to it i couldn't quite place

    Then the wife said it reminded her of hot wing sauce a little

    When i got home I went to experimenting with it
    I mixed about 3 parts Sweet Baby Ray BBQ sauce to 1 part Sweet Baby Ray Hot Wing sauce and bingo!

    Its the bomb on chicken and im guessing whatever you wanted it on
    Just thought I'd throw it out there

    Basically what you did was turn a traditional Texas-style BBQ sauce into a Carolina-style BBQ sauce (the key being the vinegar-based wing sauce).

    You can add white vinegar and mustard to Stubbs or Babyray for that mustard acid twang. I've made sauces from scratch but it doesn't take much set the store bought stuff off.

    The north Carolina bbq I had was boiled. They'd boil the meat then stick on the grill. That way it didn't take hours to soften the meat.

    I have always liked the vinegar based sauces.
    When I smoke brisket, I usually take brisket drippings and add some store bought BBQ sauce, cracked back pepper and a dab of white vinegar

    I have always liked the vinegar based sauces.
    When I smoke brisket, I usually take brisket drippings and add some store bought BBQ sauce, cracked back pepper and a dab of white vinegar
    Instead of white vinegar, I use Louisiana hot sauce, and garlic.

    It CAN be good, but the closer you get to the Carolina's the more vinegar they begin to use and IMO it can and often does overwhelm the flavor.

    We have an old family recipe that goes back who knows how far and you get the twang and the acidity, but not with vinegar. My mother made it and she got it from my grandmother who got it from...it uses fresh squeezed (ONLY) lemon juice.
