I dig that totally. I got a late start too because I'm paying the dumbass tax. Thought I had wood and was sorely mistaken. Gotta set that alarm...its the solution that wakes me up pissed-off - but it wakes me up.While I enjoy a good brisket I hate like hell smoking them. I tend to fall asleep at the critical time.

Very nice. I don’t typically smoke pork so I’m feeling my way though. You clearly have the path. Welll done.I too am smoking the piggies, 5 1/2 hrs into the mission.
So far so good, holding the temp at 250f best I can, an occasional spritz of apple cider vinegar.
