    The problem with "Game Meats" even when farm raised cost as much or more the prime beef. Having more then a couple on a menu might be more detrimental to business then good.

    The Hill Country is right here. Doesn't the Texas Wild Game Cooperative market exotic meats anymore?

    I have axis in the freezer.

    I''m looking for someplace that can give someone from out of town who hasn't enjoyed a wide variety of game meats.

    It's still cheaper importing it in. For farm venison to be sold it has to go thru USDA inspection as does the processing plant. There are guys who own mobile processing trailers who can come out & do the work, but they are not cheap either
