    Out here by the lake!
I admire the hell out of ya'll that cook/bbq/smoke so well.

My best is bbq/smoke chicken thighs, though in years past I'd smoke a whole turkey for hours and hours (I'd get up off and on all night) and brisket was a 12/14 hr. effort...but I don't have the stamina for that kind of dedication any longer.

You that do - I salute you!
I was out setting up my screened porch while doing some more yardbirds. I should have watched the Kamado a little closer. While the birds were still good they should have come off sooner.

Notice I added a cot for when I do a brisket.

I still enjoy the time spent smoking. For me it's still a labor of love, and the greatest enjoyment is for people to enjoy the food I cooked.

    Just gotta keep after it.
Once ya get it down its simple as maintaining the fire/heat and letting the smoke do the rest.

Gas pellets or whatever can not ever produce the same flavor/texture as meat done on wood.

I had no complaints today with this brisket smoked on pellets.

Here is the secret. I am responsible for the propane starter that we use in the firebox. I cut the wood, usually pecan and or apple. My wife does the cooking. So easy.
