Growing up when we had stupid money we would drive to this place & buy what ever the the guys were working on at the time or suggested. Ate some real exotic game before I ever left the area I grew up in.

There was one in Houston 60s-70s - west/southwest area. They had exotic game, ostrich eggs, and other goodies.

For grocery stores, Brookshires has excellent quality. Far better than HEB or Wallymart.

Independent meat markets will be a local thing.

I don't know if anyone has mentioned the WalMart "Australian" Wagyu steaks yet, but I picked some up a couple of weeks ago, slapped them over some charcoal until they hit an internal temp of about 135. Let them rest for 15 minutes and cut them up into thin slices.

Dang, crazy tender and good. Easily punching above the weight class IMO.

I've been having relatively good luck cooking Flat Iron steak sous vide, then searing in the broiler.

Far cry from what meat quality was years ago when the best rib eyes from Randalls, when the Onstead family owned it, was $5/lb.

I gave up on good steak when the "Angus" schtick hit the retail market.
