    No store-bought sauce. Wolf brand chili instead. Baste the corn tortillas in the warming chili for about 10-15 seconds (any longer & the tortilla will self-destruct).
    Fill the basted t'tilla with shredded cheese and/or chopped onion. Roll 'em & toothpick them to stay rolled. Pour the rest of the chili over the enchiladas & heat at ~400 til they smell good.

    I mix Goya Tomatillo Sauce and Hatch Green Enchilada sauce; add some cayenne and fresh cilantro some fresh jalapeños and onions and a little garlic. The mix pairs well with shredded chicken or ground beef.
