    Have two briskets and a 3 bone rack of Dino Ribs going on the smoker at 4 a.m...well...the briskets anyway. One is Wagyu. Gonna be tasty. I'll update the progress in the food porn thread. We should be eating at around 6pm if all the stars line up.

    At some point I'm gonna get a smoker and start down that road. Couldnt swing it on fathers day so my birthday is in November and my anniversary is this month.

    Academy has a good stout USA made off-set smoker for sale at 399.00. Online they're 449.00 but at the store you can get the good price. I almost let my "heavily" modified OK Joe go for it, but ultimately decided to dance with the girl I brung. Were I to start from scratch and buy an offset stick smoker - the Academy unit is the one I'd purchase.

    After owning my pellet smoker the last several years, I'll never own another stick smoker. The pellet smoker is just too easy, set it and forget it!

    Kroger has some great looking ribeye's on sale, that's what I'll be cooking this weekend!

    If or when I decide to retire my old home-built smoker, I have been looking at the Oklahoma Joe pellet smokers at Lowes. They are really nice looking.

    I am firing up the smoker to do a brisket tomorrow. 13lbs at 200 for about 10 hours over pecan. It has been sitting in the fridge with a dry rub on it. After it comes off the smoker tomorrow I will slice it and chop for use in sandwich’s on the 4th along with some smokes poblanos, jalapeños and some hot white peppers and onions for fun.

    Well so far, we made out a grocery list of things to pick up tomorrow morning for cooking, grilling and smoking this holiday weekend. Planning on a small brisket, a whole chicken, pork loin and some pork ribs for the smoker. Burgers, hot dogs, ribeye steaks and sausages for the grill. Wife is going to make some baked beans, potato salad, and a three bean casserole as well. Should be plenty that I can take to my father to eat on for few days and we won't have to do much if any cooking next week.
    Your neighbors are coming with a menu like that.
