    We were watching the ole gauge. Got to 15 min before time and thermometer said 165. Snatched it out and mom temp'd it at 172-175 so no tellin where it peaked at with carryover. Breast was to die for but the dark meat on the bottom got a little tough. After a little more edumacation on YT Im realizing it should have come out at 155 in order to peak at 165.

    Second round on saturday with all the fam. Im very pleased with it.

    Im very curious what kind of heat range this thing runs at. Gonna be a lot of temp'g of the machine saturday.

    I brined mine the night before, it made a difference in the moisture in the bird. About the last 30 minutes I put the grate/cover on it to help brown it up some more. I didn’t pull this out until the cooler parts hit 165.

    We used a brining kit from Central Market that also included a spice packet I rubbed under the skin. I also sprayed the outside of the turkey with canola oil. All in all it was a good experiment.
