    I use onions and diced green, yellow, and red bell peppers, and a fist-full of garlic. Depending on the audience I will add diced jalapeños and Habaneros.
    I usually saute some jalapenos for my own bowl. I like it spicy hot and can't help but make it to my own taste, then I hear the complaints.

    Hi again. I was wondering..... do y'all have any opinions on what vegetables are good ingredients for chili?......
    Fresh vegetables, like tomatoes, onions, garlic, bell peppers, jalapenos, poblanos, serranos. habaneros, ect.

    I prefer fresh for my chili, but will use some canned tomatoes in a bind..

    You can also temper the heat of the hot peppers by using some brown sugar and or molasses in the chili. A little trick I learned years ago. People can stand higher heat in their food, if it has good flavor.
