    So I cooked extra bacon this morning so we can have bacon, avocado & tomato sammiches for lunch. Sure is a hard thing not to think about that extra cooked bacon just waiting for lunchtime!

    Damn. Two of my favorite foods.

    I bet that’s tasty.

    You should’ve cooked Brunch Bacon in addition to your Breakfast and Lunch Bacon. Also don’t forget about some walkin’ around Bacon

    When I retired, to make the finances work, eating in restaurants was OVER! I saved a fortune and it was the single most significant factor in staying in the "black" every month.

    Every meal is cooked at home and since cooking every day looked like "work", I make large batches of food, then nibble on that during the week.

    Right now, there are 5 pounds of chicken thighs in the oven to eat this week. The meat can be used for chicken soup, chicken burritos, and a vast variety of other dishes.

    Later, I'll cut up and bread (shake & bake) two pork tenderloins to alternate with the chicken. The small pieces are like tiny Fillet Mignon's! Those taste great and only take about 30 minutes to cook in the counter top oven. I put a temperature probe in one piece and cook them at 375 degrees until the probe alarm goes off.

    The OP made me smile as knowing that the delicious Bacon is in the fridge just waiting for you is how I live every day!

    I'm not entirely clear on the concept of , "extra bacon" What is that? I've never even been able to have "leftover" bacon, let alone, extra? If it's cooked, it's eaten. Period, End of sentence!

    I just cook bacon to season my cast iron skillet.
    Anything else is lagniappe ... in the finest sense.

    ETA: Had to abuse the cast iron again this morning ... no extra, just enough.

    My uncles used to call me the "Ketchup Kid". I love the stuff!

    My latest dish is what I call
    "Chicken Ketchup-Tory"

    I put 5 pounds of chicken thighs in the counter top oven with a probe in the largest thigh. When done, I paint the thighs with ketchup while the oven is heating to 450 degrees. In they go for 10 minutes until the ketchup turns into BBQ sauce. HMMMM, love 'em!

    The "Shake & Bake" pork tenderloin came out great! I had four of them tonight with some Walmart Potato salad. YUM! They took about 50 minutes to cook and they were very tender. Jake the Wonder Dog always gets a taste and he loves 'em!
