Although a Scottish dish with questionable ingredients, I've found that a bottle of my favorite Italian red (maybe two) can make any dish palatable.

Hush your mouth. Haggis is best enjoyed with a nice, rich Belhaven Scottish Ale, and followed by a good single malt whisky.

The whole concept of "waste not/want not". The Highlanders came up with it to make use of every possible part of the sheep, and at least make it taste good...because they didn't have the luxury of wasting anything useable.
