Two morals to this story.
Prep (trim, clean up, separate two point sections, do everything but slice).
Use a food saver ie. vacuum pack the unused part and freeze it.
No Problem.
If it smells or feels bad then throw it out. We're told to let it thaw in the fridge but I can probably count on one hand the number of times of done that versus using COLD water.
For some reason this brings back my dad's attempt once in the early 70's. He was out of lighter fluid and used kerosene as a starter to smoke a brisket. He still tried to make us taste/eat it after we smelled the kerosene burning all day. Yes, it doesn't burn off like lighter fluid. He might as well have used diesel as a starter but I guess he didn't have that handy.
