Most guns I shoot are in everyday/common calibers but I have one rifle in a somewhat offbeat caliber if only because of its age and because the caliber was surpassed by something better. That caliber would be 7x57mm Mauser for my Mauser Chileno 1895.

One or two others I shoot might be considered a bit offbeat by some - 22 Short (not all that popular anywhere) and 32ACP (not a very popular caliber in this country) but the 7mm Mauser is about the most unusual I currently have in inventory.

The most offbeat caliber I have ever shot, in a centerfire firearm, was 7.5x55mm Swiss in the Schmidt Rubin 1911 that I used to own.

The most difficult things for me with multiple and sometimes odd calibers is my inventory; although, finding and then purchasing a 7x57mm field headspace gauge was a bit of pita and an expense.

Occasionally shoot .25 ACP in dad's old Colt vest pocket. .32 ACP not unusual to shoot. Wife's carry gun is Kel-Tec P32. She won't carry anything bigger.

I, similar to baboon, only posses minimum of different calibers, all common.
Most unusual I ever shot was called a 7.62 (i think) Argentine. It was an older milsup (back in the 70's). Seems to me it was similar size length-wise, to a 30-06. Kicked like a sumbitch but was hell on coyotes. Was next to impossible to to find ammo back then.

ALSO back in the day I really liked the .257 Roberts and the .22 Hornet. Coyotes and Prairie Dogs and Jack Rabbits.
