Big pot of pinto beans, cooked with some smoked brisket fat, homemade cornbread, soft-fried potatoes, and pan-fried pork chops. Picked up a new jar of spicy chow chow a couple of weeks ago that I have been wanting to try out.

ETA: Wife asked if i could make some rice and gravy to go with everything, so I'm making that as well.

Took some of the bacon & cut it in chunks the browned it in a sauce pan until nicely caramelized. Emptied the pan dumped the grease & added about 1 1/2 cups of rough cut celery hearts + 8 cups of water bringing to a boil. I seasoned that with Soy Sauce , Fish Sauce, Hosin Sauce , Lime Juice & Shirachia. Then I dumped 4 containers of Cup O Noodles Lime & shrimp flavored. Stirred in the pork right before serving.
