Grandkids came over for lunch, so we made clamcicles.

We had baby back ribs with cabbage fried with onions and bacon last night. Between us we only ate 1/2 of a rack. I pulled the bones out and put the leftover meat in a tuppie.
I’m thinking either pea soup or navy bean soup.
Anyone have a better use for leftover pork?

Grits IMHO needs pork. I have even used leftover smoked pork in Cup O Noodle Spicy Shrimp & Pork. When I do it I cook it in a pan then start kicking it up.Cilantro white onions Hoi Sin Sauce, Fish Sauce, lime juice. and actually get the noodles cooked.

Got into making fruit salads so my wife could grab some thing quick & health. Just finshed eat my Honey Crisp Apple, Blueberry & Red Grapes.

I thought I might have a return house guest tonight & did Cast Iron Fajitas, but He opted for spending the night out in the woods at his buddies 40 acres. He's scouting for a Turkey day hunt & hanging game cams. Tomorrow I'll makes some refried beans & mexican rice that will carry me a few days.

I bought 2 pork butts & the plan in cut off the boneless side & make back board bacon, then smoke the bone in side for pulled pork.

Meal times suck without the wife around.
