    Air fried empanadas stuffed with vinegar pulled pork. Gotta say, for these the oil fryer is better. Couldn’t get em as brown as I wanted.

    No I think that’s likely the problem. This is the first time I air fried them and I didn’t think of it till too late. I usually use oil for these. I still have a pair that I haven’t fried yet for tomorrows lunch. I’ll see if that fixes it.

    Brushing them in lard or clarified bacon grease is another option.

    Cheater Enchiladas. Frozen beef and bean burritos thrown into a 13x9 topped with tomato sauce, enchilada sauce, green chilis, and cheese. Later topped with black olives, jalapenos, cilantro, sour cream, and "Fire" Taco Bell sauce. Frijoles and rice on the side. I should probably take a couple of Tums before bed.

    Today is National Pizza Day and nobody told me! Now I'm stuck with a not-quite instant replay of yesterday's burger and black beans. Maybe I'll add half a leftover bag of potato chips to give it some variety. Darn.

    Yea I didn’t realize either. But I can’t find any decent pizza near me man.

    Chewbacca, a few days ago I tried a Di Giorno rising crust pizza, I think it was a 3 meat. I added some leftover bacon chopped, a little more mozzarella, and covered it with HEB pepperoni. It was the best pizza I've had in many years. I got it at out local Dollar General and am going back tomorrow and buying 3 or 4 of them to keep in our freezer.
