I made Home made corned beef, dill pickles, ranch style beans, baked potato, and grand daughter fixed cookies for desert.

Last night was pinto beans, cooked in pressure cooker, with ham hock and chunked ham , baked potatoes and ice cream bar.

Left overs from both will hold us a few days.

We really like enchiladas, I spent 14 years living in NM. Learned to love CO and NM Mexican Food. Especially with Hatch Green Chili. Lived in Silver City most of that time. Edge of the mountains, best weather anywhere.

Last weekend we all attended a Wedding for my wife's youngest son. He is married to a Mexican lady in Cleburne. The night before we went to his wife's parents home. Her mother made the very Posole that I have ever had. She is an incredible cook. I am saying this after many years of NM Mexican food, best in the world.

Tia Juana's in Hobbs is good.
Used to be one in Roswell, but they closed, permanently.
Everywhere else just tastes of cheese and hatch chilies.

I lived almost all of the time I spent there, in Silver City. Traveled SW NM and SE AZ. I know some really good Mexican Restaurants.
