    Blasphemy to pan fry a rib eye! Pan fry a pork chop or a cutlet or a chicken, but never a rib eye, unless it's a cheap one.

    A steak seared in a screaming hot cast iron skillet is greatness.

    I do sear it in the cast iron on the grill but still…

    Searing in a skillet is different than pan frying. A blackened steak or fish is seared in a cast iron skillet, not pan fried. Butter would never hold up to the temps of searing.

    Searing in a skillet is different than pan frying. A blackened steak or fish is seared in a cast iron skillet, not pan fried. Butter would never hold up to the temps of searing.
    Ghee is butter & has a 250 degree smoke point. Brown Butter has 350 degree smoke point.

    Blackened Redfish as it was created was dipped into melted butter first to get the spices to stick.

    We got home late from visiting friends, heating up Trader Joes Orange Chicken, steaming some white long grain rice. Drinking the first of our gin martinis, gonna make a second one to go with dinner in a few.

    Baked tater with pepperoni. Smothered with mozzarella and gruyere and a few panko crumbs for crunch. It was actually a few days ago, but it was so good I had to post it. We're having just regular spaghetti and meatballs tonight.
