    Velvet axis make a nice mount.

    Black Bear in Canada with my XB this Fall. = Maybe even a beautiful CINNAMON bear, like my old friend, Nick P., got last year!!!
    (Feral pigs for the BBQ don't count.)

    Taste like goat. Younger ones and ewes are tasty. But you are not paying for a younger one or a ewe.

    My dogs like the meat well enough though.

    Even the OLD Axis bucks make GREAT sausage.
    (That's the only Axis buck dish that I've found edible.)

    Otoh, I agree that the ewes & youngsters are GREAT as BBQ.
    (Every cut of Axis that I've eaten either was made into chili or BBQ, other than the sausage that the meat market near Boerne makes.)

    BTW, the BEST by far TEXAS RED CHILI that I've ever had was what the cook at the Boerne Nature Center calls, "Invasive species Chili", made with half Axis meat scraps & half feral pork. = He makes about 20 gallons of it for every "Work Day" & NONE goes to waste.

    Axis is second only to fallow deer for least gamey. It’s really tasty.

    Hoji was saying black buck was gamey. I would guess it’s tough too.

    My experience with Axis is that it's more like Elk. Darker, beef like, and delicious.

    Thats what I have been reading online. I actually took an elk in December in Pennsylvania and got about 350-375 pounds of meat. It is better than beef imo.

    Not that is exciting! The experience looks fun, the meat looks perfect.

    I actually dropped a big game application for Elk in AZ yesterday.
