It's HOT, and the tomatoes in the garden looked SOOOO good, so I whipped this up for dinner tonight.
Garden fresh 'maters stuffed with a chicken salad made from left over grilled chicken breast and thigh meat mixed with fresh guucamole, corn, diced green chillies, mexi-blend cheese and black beans, topped with more cheese and put under the broiler just long enough to melt the cheese on top.
Fast, easy, great blend of flavors and actually good for you!
