    Up and at it early in the kitchen today, chicken cacciatore attempt #1 is about to go down. I'm trying to jog a memory (for my girlfriend) that I do not possess. This dish can have many regional influences/nuances, and I (hate to admit that I) have never even had it. Did you grow up with chicken cacciatore? Can you tell me about it, I'm taking notes as I know this will be tweaked a few times before I am happy with the final outcome. For this, I'm following the recipe found in Collards and Carbonara; Southern Cooking, Italian Roots.

    First thing is get a good wine. Sutter Home is not it. The old saying cook with a wine you would drink. I like to have mushrooms in mine. The hard part is getting the sauce the way you like it. If you have a favorite sauce recipe use it.
