I have 6 cans in my bug out bag.
No worries of anyone else eating it.
I'm thinking that if I ever get that desperate it'll be good.

I better check to see if there is a date on the cans.

My son in law’s mother supposedly makes really good menudo. I tried it and it was good, but I couldn’t do the tripe. Pushed the tripe aside and ate the rest.

The tripas require detailed cleaning & scalding BEFORE adding. I learned from a friend’s late Dad in Corpus, he spent hjours cleaning it. Good news is that HEB’s have frozen, thoroughly pre-cleaned tripas for menudo.

Tripas are small intestines. Tripe is stomach lining. Not all tripe is equal in Honeycomb Tripe being the preferred and used in Menudo.

Honeycomb is from bovine stomach(s). Tripitas are cleaned small intestine “chitterlins’ ? (“chitlins”) ?

I have never tried to make menudo, but have watched our Nephew make his version.
