You can swap it out if you buy an upper in 6.8 SPC.
As far as I recall, all you need to do to convert your existing upper to 6.8 is to replace the bolt head, barrel, and maybe the magazine to ones made for 6.8. (PRI makes mags better suited for 6.8, and feed better than regular AR mags made for .223/5.56.
I always reccomend more AR lowers, but yes, you can certainly swap out uppers. Taht is the beauty of the AR-15 system.

If I buy an AR chambered for .223, can I swap out the upper at a later time for say a 6.8? Or do I have to buy a whole new AR for each caliber?

From what I understand, all I would have to do is buy this item above (for example); Take the Upper off my current AR-15 and put this on. Then just slap in the 6.8 magazine and I'll be ready to roll???
I'd say store it just like you'd store a firearm. Lube it and put it away... Just be sure to keep the bolt with the upper. Easiest way to do that is drop the bolt group in place and put the upper in your safe (or wherever) muzzle-down.
