I wound up with the day off - a little surprising because of some shake up personnel wise at my new hospital. I was originally scheduled, but then that got changed and I have today off. We bought some pork loins last week - I had intended on smoking them last week, but then things changed. So these have been sitting in the back fridge waiting for a day off so I could properly cook them. I carefully fired up the smoker (its design won't allow any burning particulate out, or hasn't yet anyway, and I don't think the burn ban covers BBQ pits) and have had a pair of 5lb pork loins smoking for hours now. Last temp check was 130 - going to pull them off about 145-150 and let 'em rest. Wife is going to make mac & cheese for me, since I don't do mac salad.
Last time I smoked up some loins they came out great, so looking forward to this meal.
