    Capons are damn good yardbirds. Big, meaty, juicy and as a plus they use to be cheaper then regular yardbirds. I'd love to have one to smoke on my Kamado.

    Next time you smoke a bird? (I like to smoke 5 chickens at a time...if I can get family & friends to show up)...LOL!!

    Put a tablespoon of apple sauce in the carcass....(apple butter works good, too)

    Also? The last 45min/hour or so? I core a couple of apples and put the chunks of apple on top (under the foil tent)...

    I might try smoking a small turkey this year...??

    Not sure if there is a place to order up capons close by (nearest place I know? Is 100 miles South of here)...

    Spatchcocked is the way to do whole birds including turkey. The reason you don’t see capons is simple they raise chickens twice the size they did 30 years ago.

    No different with hogs. When I was an apprentice meat cutter 3 down ribs were the way America rolled. Buying spare ribs now they are 6+.

    Yeah, that wasn't an option back when that rooster got uppity with mom and got itself killed. It was full grown and too big for its theoretical britches.
