On another forum there was a Taco Bell manager and he would never say what the filling was made of, but I seem to remember him saying they used an electric drill motor & paint stirrer when making batches up. Having been in a commercial kitchen I have seen Robo Coupes Stick Blenders, but never a drill & part stirrer!Not me Baboon! You were the one that told me what tripas were! I spent $7 there one night in Orange, TX in 2000. Kept me busy for a week. Just recently we bought a little takeout from the one in our neighborhood and no problems. Dude I can teach you cheap easy tacos from left over off you pit! We seldom eat ground meat tacos with packet seasoning for the salt content! It's like I like a chili dog every once in a while. Canned chili & hot dogs jack me up for the salt. If I use my own chili no problems.I love good authentic tacos, but sadly Taco Bell tacos are one of my guilty pleasures in life!

There are also spices like cumin, salt pepper & veggies like onions, jalapeños & cilantro and just enough fruit flavor from a lime or 2.There are low sodium taco mixes now.

I don't do chorizo. Actually I have never tasted it but I remember a story about a guy camping on Padre Island and coyotes got into his food while he was fishing. He said they ate or took everything but the chorizo. Said it looked like they had chewed it and spit it out. i decided if coyotes wouldn't eat it neither would i. Daughter eats it and calls it good. There is Spanish chorizo & Mexican chorizo. The mexican can be pork meat but is mostly fat & or thymus glands (Sweetbreads). Not unlike boudin being mostly pork liver .vs pork meat. I made plenty of both while at work. As far as a coyote not eating it, Mexican chorizo has vinegar in it recipe.Chorizo is simply a very spicy sausage, usually made from pork, but can be made from other meats as well. Typically pork is the first choice most people use to make chorizo. Very similar to a spicy regular pork sausage, but with a little more heat to it.
