Cant find much about these strange birds in terms of hunting and eating. Not that I am going to schlep all the way to West Texas border country to hunt them, but inquiring minds would like to know.
I finally found a thread from 2016 on the Texas Hunting Forum and it pretty much sums up that there is almost zero real hunting for these birds and those that do hunt them are rare birds themselves.
Sounds like a lot of crawling around through the thickest brush possible and then ground sluicing something that you end up on your belly trying to pick them up.
So much for my chacalaca fetish! I guess I will stick with sandhill cranes for my exotic bird chase.
