    (I cut the powdered ginger to 3/4 tsp and one clove of garlic is plenty, was a little too much)

    For duck I marinate the breasts for about an hour in the sauce then grill on a hot grill with a little alder for smoke, 2-3 mins per side depending on size so they are about medium rare. then slice and drizzle a little of the sauce over the top. My favorite duck recipe.

    These are harlequin, and they are good, but some mallards or other puddle ducks and its is really outstanding.

    No, I just moved down from AK for a while. They are very common up there if you hunt the salt. Like any sea ducks you need to get creative with the cooking.

    Here's one volunteering to come over for bourbon duck.

    On a Texas note, had the mesquite smoked duck at Goode Company BBQ, on Kirby here in Houston, last night.
    Although I've thought the last ten years that Jim's BBQ had suffered from expansionitis ... pretty damned good(e) ...
