I recently asked a guy who used to be a cook. He said one way is to bring the water to a boil and add a cap full of vinegar and turn off the heat and drop in the egg/s. He says the vinegar keeps the egg whites from getting "stringy". I haven't tried it yet myself.I wish I knew how to get my poached eggs to turn out that perfect.
