i also made a variation on this the other day.

    1 red bell pepper
    1 can of artichokes
    fresh mushrooms
    garlic
    1 bag of fresh spinach
    pepper jack cheese
    chicken breast

saute all the veggies off (except spinach). when all sauteed, dump on the spinach and allow to wilt. butter fly chicken breast. stuff chicken with veggie mix, add some pepper jack cheese in the middle too. bake at 350 til done.

I've discovered that HCG Diet recipes are pretty damn delicious and can be tweaked for human caloric consumption.

I make a Mexican chicken soup similar to the recipe below that is outstanding. I've tweaked mine with Roma tomatoes, more cumin, some chili powder, and Roma tomatoes.

    HCG Mexican Chicken Soup

100 Grams - Cooked Chicken Breast (Shredded
    2 Cups - Chicken Broth
    ½ Onion (Diced)
    1 Clove Garlic (Minced)
    ¼ Teaspoon Cumin
    Pinch of Cayenne
    A Little Fresh Cilantro (Chopped)
    Sea Salt and Black Pepper

    Directions:

In saucepan, combine Onion, Chicken Broth and Garlic over medium heat.
Cook for approximately 5 minutes, stirring occasionally.
Add Chicken, Cumin, Cayenne, Salt and Pepper.
Continue to cook over medium heat for an additional 10 to 15 minutes.
Remove from heat, sprinkle with fresh chopped cilantro and serve.

Chili is always a good choice. Also beef stew (easy on the potatoes). Steak and veggies. If you've never tried quinoa (pronounced KEEN wa) its a great substitute for rice and can be used in many ways you can't use rice. (It fries up nicely!) My wife makes a good version of Spanish rice with it. It's not a grain and has fantastic nutrients - the only drawback is that you have to rinse it off really good or else it will taste like soap. (The Incas used to use the rinse water as soap. They developed a strain without the soapy cover, but birds devoured the stuff in no time when they tried to grow it.)

BBQ is always good, but avoid baked beans (which usually contain brown sugar) and cole slaw (which contains an amazing amount of sugar). Pinto beans are good - low carb and high fiber.

Instead of using bread crumbs on chicken or fish, grind up almonds. Not only does it taste great, it actually makes the meat juicier (because of the oils in it).

Also, a lot of people will mash up cauliflower as a substitute for mashed potatoes. It's a slightly different taste, but has tons of fiber and not as many carbs as a potato.
