These boats didn’t have rev limiters or electronic-anything back then.

Every time those props leave the water, they had to back off the throttle.
Miss it once, revs go to the moon, blown motor.

Every time those props re-enter the water, they had to get right back on it.
Miss it once, expensive spinny things snap, blown motor and/or drive.

Big brass balls also play a role
