    If in your travels you ever get to Cincinnati, be advised that they sell some sort of hamburger soup ladled over noodles up there. This hamburger soup includes both chocolate and cinnamon.

    They call it chili.

    They are also insane.

    I used to eat that when we lived in Ohio and Indiana. The chili (no beans) was over spaghetti. I thought it was pretty good, course I was only 10 when we moved up there. I remember that there were restaurant's everywhere that specialized in that dish.


    Forgot my disclaimer: I WAS 10!!! Lol

    The official title for the dish is supposed to be 'Chili con Carne'.
    Chili (peppers) with MEAT............ Not Chili con frijoles, Chili con MEAT!!!!!!!!!!!!!!!!!

    Pintos on the side is OK.

    Real chili doesn't use tomatoes. I like to used diced when making quick chili and generous amounts of fresh ground dried chilies (better than the powder crap). Chili also needs some acid. No beans. Everything else is up to interpretation. There's also authentic regional differences, like North, South, West Texas, New Mexico, Colorado...

    Got used to making one pan chili working and raising kids.
    1lb burger browned and drained.
    Add:
    1 small can tomato sauce
    1can ranch style beans
    Onion and chilli powder to taste.
    Simmer 15 minutes while the rice cooks.
    Real hungry,,double ingrediants.

    Plain chili is small pieces of meat simmered in a sauce made from chili peppers. That's it. From a historical standpoint the meat doesn't have to beef; it was made with anything on hand.

    Fancy chili is plain chili with anything else you want to put in it. I like to make fancy chili ;)

    Bingo.

    When I make chili, I take all the meat in the freezer from last year. Run I through the grinder. It typically included dove venison chicken turkey and beef add about a appropriate amount of bacon.

    Brown.
    Then salt, pepper, chile, some tomatoes from the smoker and a dash of sugar. If the tomatoes don't quite give it the acid it needs a splash of viniger.

    Back in the 60s my mom used to make what she called 'Hungarian Goulash'.
    She cubed up a chuck roast and added ketchup, heinz 57 sauce, brown sugar, Worchestershire, tomato sauce and water.
    Browned, boiled for a few hours and She served it over egg noodles and it was about as Hungarian as Yankee Chile.

    Hell, we were kids and when you are feeding 7 kids, you dream up different crap to keep us guessing?????

    People seem to make up $h!t as they go??
