Caramelizing onions & the kraut in the sausage fat just adds flavor. Eating Gas-X before and afterwards is advised.
One of my neighbors had it first telling me that he’s not a fan of kraut, had seconds.
Back home Bratwurst are served with the caramelized onions & kraut . You can add a good brown or Creole mustard to add more flavor to the onions & kraut.I usually add some bacon fat to the kraut. Tonight I’ll add sautéed onions.

I save the juice from the slow cooker and add to soup tomorrow.
