Around here where I live, there is mostly a Czech/German population and the head cheese (Ethinitza) as they call it, is a true delicacy. I tried it once and really offended my friend, who made it, by telling him that it was something I would not even feed to my worst enemies mangy dog. I was told by many other acquaintances that he was know for making the best Ethinitza in 5 counties.

I loved that stuff when I was a kid. I figure it ranks right along with bologna in not being something you should eat often - health wise!

I know the stuff well; my dad's family are from the Czech Republic. They have some amazing food but that was not something I ever enjoyed. I would eat it to be polite but never really enjoyed it.

One of my buddies told me if you really want to enjoy it, fry it up a little and then cover it with either molasses or honey. I asked him "Why would I want to ruin good molasses or honey with that stuff". There's not much out there I wont eat but that is one of them.
