    Out of curiosity but how often is Rainbow Trout or any non sea trouts are served in a sandwich or in general in Texas. I usually don't see Rainbow Trout on any menus in SATX. But still wanting to find places that serve trout.

    I wouldn't think that rainbow trout would be a very popular thing on the menus anywhere around Texas, with exception maybe of North / West Texas close to New Mexico / Colorado.

    Never been a fan of fried trout really, at least not the breaded/fried type. Never occurred to me to try trout on a sandwhich.

    Blackened trout isn't bad. Trout and other Salmonids to me are best grilled / baked. Prefer the taste & texture of Chinook (King) or Coho (Silver) salmon more. Wild caught over farmed every time. Wild caught salmonids have orange or dark pink flesh (mostly from the crustaceons they eat - all the carrotin in their diet) while farmed fish are usually white and mushier in texture.

    I'm a big Rainbow trout person and Sandwiches are one of my favorites but a Trout sandwich has never crossed my mind.
    My chef buddy is from the Princes Hamburger family. They sold gulf trout sandwiches for years. I actually know the family tartar sauce recipe as it’s the same as used at The Merchant Prince establishments @ the Texas Renaissance Festival

    Catfish is Texan for trout.

    I'll take catfish over trout every time. 2nd favorite fresh water fish would be crappie.

    Prefer eating saltwater fish over freshwater fish though. Cod, halibut, greenling, tuna. About in that order too.

    I used to patronize this little fish & chips shack, owner / operator one-man deal. He had a variety of fishes, and the best way I've ever had tuna was done fish & chips style. He cut tuna steak into chunks, battered & fried them. Firm texture, more akin to four-legged meat than most fishes. Mild flavor. Very tastey. I don't do the raw or barely seared tuna that is so popular. The guy's cod fillets were absolutely amazing though. Three big fillet chunks perfectly fried, with hand cut double-fried fries seasoned up with sea salt, some lemon wedges, damn that was a good lunch.

    The way my grandma cooked fish (every fish, didn't matter what it was) when I was a kid was to roll them in flour / corn meal mix and fry in Crisco. Catfish, trout, bream, bass.. didn't matter. Wasn't until an uncle of mine who was for a time a commercial fisherman in Alaska sent some salmon steaks and scallops did she attempt to bake fish. For those, she splashed on liquid smoke and lemon juice and broiled them.

    I learned a lot of how to cook from her - but her fish was terrible. I picked up how to cook fish from ancient Betty Crocker cookbooks and cooking shows.

    All my trout fishing has been done in states where the fresh water rivers and creeks flow.
    Someone take me salt water Trout fishing I'll buy lunch. ;)

    Never tried the hill country streams that get stocked with trout? I'm on some Texas fishing groups on Facebook and dear god, the people who lose their shit over fishing for stocker trout is kinda nuts. I get it - it gets you the moving-water trout fishing experience without the trip to Arkansas, Oklahoma, or New Mexico or points beyond, but I'd rather be fishing those same creeks for the native basses, catfish, and bream. So far I've only caught largemouth and spotted bass here in Texas, I really want to get some Guadalupe pass on light tackle this year.

    I remember catching a few at Millers Pond when they stocked em. Still I do wish trout in general could live in South Texas but funny enough I have caught smallmouth bass with trout rigs
