I will have to check it out at some point. I have heard theres Pickerel in Austin and Smelts as well. I heard fried or baked smelts are great.

Out of curiosity but how often is Rainbow Trout or any non sea trouts are served in a sandwich or in general in Texas. I usually don't see Rainbow Trout on any menus in SATX. But still wanting to find places that serve trout.

Maybe cause that's disgusting?

You can keep both. Too many bones in pickerel and smelt are smelly. Both are good for bait. I don’t eat bait

Did an ATV trip in Utah in 2005, we rode along a creek to get up the mountain. The whole group stopped and fished. We caught numerous trout. My buddy had a small propane grill in his Ranger and foil, lemon, and butter. He grilled them up for us, was very tasty!

I have often wondered if fire departments have some secret ingredients in their fish batter. It seems their fried fish is always good regardless of what kind it is.

Maybe the beer is the secret!

I wouldn't want to eat pickerel though I hear they put up a good fight and easy catches with a spoon or inline spinner bait. Also can be caught on smelts.

Makes sense. Though I will say deep fried catfish with some cabbage and habanero sauce in a corn or flour tortilla is pretty good.

Catfish po'boys aren't too hard to get ahold of around here...but rainbow trout might be a stretch.
