The Cajun in me says you gotta die of something, so it might as well be of a good time. If I lived close enough, it would never be anything but a "#9 with hot sauce" at Taqueria Chihuahua on 290 in Giddings.

As it is, I settle for two eggs, over easy in seasoned olive oil, and two nuked slices of turkey bacon, both on top of one slice of toasted Genesis bread; cut twice each way, I eat eight of the bite sized parts, and the pup gets the last one.

    Butter.

What are some good ideas for a healthy breakfast on the go.

I've been eating 7/11 sausage and biscuits but figure I can do better. Switched to fruit cups but they aren't exactly filling. So what are some easy ideas for a good breakfast on the run?

    MRE's. :)

Cooking a large skillet meal with eggs, bacon, tomatoes, etc. is usually pretty easy and lasts all week!

I agree. On Sunday's I scramble just six eggs (in the frying pan with pico de gallo, bacon and sausage); top the concoction with shredded cheese; then put it in the broiler for a few minutes to just melt the cheese.

Sliced in the pan, and served with a flour tortilla and salsa, there's always enough left over to go into the refrigerator for another two days breakfast for one.

Leftover slices, wrapped in a flour tortilla and a paper towel, can be nuked in less than a minute and is ready to go with you.

I will do about 13-14 eggs, removing the yolk from 10 or 11, add Bacon, this will feed myself & my GF gets some as well.
